lb cooked PEI lobster, roughly chopped
tbsp mayonnaise, divided
tsp fresh lemon juice
freshly ground black pepper
leaves romaine lettuce
cup dill pickles, sliced
Kaiser rolls, toasted
In a large bowl mix together lobster, 2 tbsp mayo, lemon juice. Season with salt and pepper. Spread remaining mayonnaise on toasted Kaiser rolls, layer on lettuce, pickles and top with lobster mixture. Wrap roll in parchment paper and bring to your favourite Island picnic location.
